These are great for a healhty snack or good for a quick breakfast on the run. They are high in soluble and soluble fibre but still moist and delicious to eat. They will not last long so be sure to double the mixture.
Dry Ingredients:
1 ¼ cup Brantastix
1 ¼ cup White Flour
1/3 cup Brown Sugar
1 ½ Apples (grated)
2 teaspoons Cinnamon
1 teaspoon Mixed Spice (optional)
1 teaspoon Baking Powder
1/3 cup Sultanas
Wet Ingredients:
1 egg (lightly beaten)
¾ cup apple juice
¼ cup Butter (melted) - or sunflower oil or a nut oil
1. Mix dry ingredients together in a bowl.
2. Gently mix wet ingredients into dry ingredients trying not to stir too much.
3. Place into greased muffin tuns - filling each one to the top as they don't rise as much as other muffins do.
4. Bake at 175ºC for 25 minutes.
Makes about 6 large muffins
