Gluten Free Slice

This is a healthy alternative to bought muesli bars.  Great for an afternoon pick me up at work or as snacks for the kids after school or in the lunch box.  It is packed full of dried fruit, nuts and seeds, helping to increase minerals in the diet.

Dry Ingredients:
1 cup Thank Goodness Gluten Free Rice Flakes (lightly crushed)
1/3 cup Sesame Seeds (toasted)
1/3 cup Pumpkin Seeds (toasted)
½ cup Raisins
½ cup Apricots (cut into small pieces)
½ cup Dates (cut into small pieces)
½ cup Peanuts (roughly chopped)

Wet Ingredients:
2 Tablespoons Butter or Spread
1 Tablespoons Honey
¼ cup Brown Sugar

1.  Add all dry ingredients together.
2.  Melt butter, honey and sugar together.
3.  Pour over dry mix and stir.
4.  Press into a slice tin and place in freezer to chill quickly.
5.  Slice and serve.

Makes about 8 slices.

Best kept in the fridge.
