Ingredients
¾ cups plain flour (700ml)
1¼ cups sugar (300ml)
1 egg
2 teaspoons berry flavouring of choice (e.g. Raspberry)
100g melted butter
4 teaspoons baking powder
Icing
200g melted butter
2-3 sachets Berry Berry Nice Oat Sachets
¾ cup sugar
- Preheat oven to 200oC
- Mix all cake ingredients until well blended and slightly fluffy (a mixer is useful)
- Spread in a well greased or lined tin/dish (23x33cm). Needs to have highish sides as cake rises well
- Mix all topping ingredients and spread on top (you can leave bare patches for a marbled effect)
- Cook for 20 minutes or until skewer comes out clean (cake can look under cooked)
- Stand for 10 minutes
Very nice as a cake or can be a warm desert with yoghurt or ice-cream. You can microwave pieces on high for 15 seconds but be careful not to burn the topping.
This recipe can also be made with the Golden Sunrise by adjusting the flavouring or removing it.
